Ingredients

  • 1 cup uncooked white rice
  • 14 1/2 oz can chicken stock
  • 1/4 cup water
  • 2 Tbsp lemon juice
  • 1/4 tsp dill
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 2 1/2 cups thawed frozen mixed vegetables
  • 1 cup dairy sour cream
  • 12 1/2 oz can tuna

Instructions

  1. In a heavy 1 1/2-quart saucepan with a tight lid, combine rice, chicken stock, water, lemon juice, dill, salt, pepper, and garlic powder.
  2. Bring to a boil over medium-high heat.
  3. Cover, reduce heat to low, and simmer for 20 minutes.
  4. Stir in the frozen mixed vegetables.
  5. Cover and cook for an additional 5 minutes until the liquid is absorbed.
  6. Stir in the sour cream and drained tuna.
  7. Serve hot or cold.
