Ingredients

  • 1/4 c. butter or margarine
  • 1 onion, chopped
  • 1 c. long grain rice
  • 1 1/2 c. chicken broth
  • 1/2 c. sherry
  • 1/2 c. raisins
  • 1/2 c. slivered toasted almonds
  • 1/4 tsp. allspice
  • 1 1/2 c. fresh cranberries
  • 1/4 tsp. nutmeg

Instructions

  1. In a large skillet, melt butter or margarine.
  2. Add chopped onion and cook until soft and tender.
  3. Add rice, chicken broth, sherry, raisins, toasted almonds, allspice, cranberries, and nutmeg.
  4. Lower heat and simmer, covered, for 20 to 25 minutes or until rice is tender.
  5. Let cool before stuffing turkey.
