Ingredients

  • 1 (about 1 1/4 lb.) pkg. The Turkey Store premium fresh lean ground turkey
  • 4 1/2 oz. (2 cups) rotini (spiral macaroni), cooked and drained
  • nonstick cooking spray
  • 1/2 cup chopped onion
  • 1/2 cup mild taco sauce
  • 8 oz. can tomato sauce
  • 4 oz. can chopped green chilies, drained
  • 1/2 to 3/4 teaspoon ground cumin
  • 1 cup frozen whole kernel corn
  • 2 to 4 oz. shredded Cheddar cheese
  • 2 to 4 oz. shredded Mozzarella cheese
  • avocado wedges (if desired)

Instructions

  1. Heat oven to 350°F.
  2. Spray a 2-quart casserole dish and the bottom of a large skillet with nonstick cooking spray until well coated.
  3. Heat the skillet over medium-high heat for about 30 seconds.
  4. Crumble the ground turkey into the skillet and add the chopped onion.
  5. Cook and stir for 3 to 5 minutes or until the turkey is lightly browned.
  6. Stir in the taco sauce, tomato sauce, drained chopped green chilies, and ground cumin; blend well.
  7. Simmer the mixture for 5 minutes.
  8. Add the cooked rotini, frozen corn, and half of each cheese to the turkey mixture and mix well.
  9. Pour the mixture into the prepared casserole dish.
  10. Sprinkle the remaining cheese over the top.
  11. Bake in the preheated oven for about 20-25 minutes or until heated through and cheese is melted and bubbly.
  12. Optional: Garnish with avocado wedges before serving.
