Ingredients

  • 16 oz. can pinto beans, drained
  • 1 small tomato, peeled, seeded and chopped
  • 3 scallions, finely chopped
  • 1 cup shredded sharp Cheddar cheese
  • 2 Tbsp. chili powder
  • corn tortilla chips

Instructions

  1. In a blender, puree beans and tomato until smooth.
  2. Transfer the mixture to a medium saucepan or chafing dish.
  3. Add scallions, shredded cheddar cheese, and chili powder.
  4. Cook over low heat, stirring, until the cheese is melted and the dip is heated through, about 6 to 8 minutes.
  5. Serve hot with crisp tortilla chips for dipping.
