Ingredients

  • 2 cups macaroni
  • 2 cups frozen peas
  • 1/2 cup onion
  • 1 cup celery
  • 1 can cream of mushroom soup
  • 1 low-fat plain yogurt (4 oz.)
  • 2 cups cooked turkey
  • 3 slices low-fat cheese

Instructions

  1. Cook the macaroni and drain.
  2. Cook frozen peas, chopped onion, and chopped celery in the microwave for about 6 minutes until tender.
  3. Add all ingredients (except cheese) to the cooked macaroni and stir to combine.
  4. If the mixture appears too dry, add 1/2 cup water.
  5. Place the mixture in a baking dish sprayed with non-stick spray.
  6. Cover with broken pieces of low-fat cheese and spread evenly over the top.
  7. Bake at 350°F (175°C) for 20 minutes until cheese is melted and bubbly.
