- Melt margarine in a large kettle over medium heat.
- Saute diced onion, green pepper, diced celery, and chopped mushrooms until tender-crisp.
- Stir in flour without browning.
- Slowly add hot chicken or turkey broth, stirring constantly.
- Cook and stir over medium heat until the mixture thickens, about 5 minutes.
- Cook for 1 minute longer after thickening.
- Stir in cooked rice and half and half.
- Heat to serving temperature.
- Blend in salt, pepper, and vermouth before serving.
