Turkey Rice Soup

Ingredients

  • 1/2 cup margarine
  • 1 large onion, diced
  • 1/2 green pepper, diced
  • 1 1/2 ribs celery, diced
  • 1 cup chopped fresh mushrooms
  • 1/2 to 1 cup flour
  • 8 cups hot chicken or turkey broth plus meat
  • 2 cups cooked rice or 1/2 cup uncooked rice
  • 1 cup half and half
  • 1/2 teaspoon salt
  • 1/2 tsp. salt

Instructions

  1. Melt margarine in a large kettle over medium heat.
  2. Saute diced onion, green pepper, diced celery, and chopped mushrooms until tender-crisp.
  3. Stir in flour without browning.
  4. Slowly add hot chicken or turkey broth, stirring constantly.
  5. Cook and stir over medium heat until the mixture thickens, about 5 minutes.
  6. Cook for 1 minute longer after thickening.
  7. Stir in cooked rice and half and half.
  8. Heat to serving temperature.
  9. Blend in salt, pepper, and vermouth before serving.
