Ingredients

  • 12 slices white bread, cubed
  • 4 oz. shredded Mozzarella cheese
  • 1 lb. turkey breakfast sausage
  • 1/2 c. chopped onion
  • 1 1/2 c. thawed cholesterol-free egg product
  • 3 c. skim milk
  • 1/2 tsp. salt
  • 1 (9 oz.) pkg. cut broccoli, thawed
  • 1 jar sliced pimento, drained
  • 1/4 tsp. dry mustard
  • 1/2 c. grated Parmesan cheese

Instructions

  1. Spray a 13 x 9-inch baking dish with nonstick cooking spray.
  2. Layer bread, mozzarella cheese, sausage, onion, broccoli, and pimento in the baking dish.
  3. In a medium bowl, combine egg product, milk, salt, and mustard; blend well.
  4. Pour the egg mixture over the layered ingredients in the baking dish.
  5. Sprinkle the top with Parmesan cheese.
  6. Cover and refrigerate for at least 6 hours or overnight.
  7. Preheat oven to 325°F (165°C).
  8. Uncover and bake at 325°F for 55 to 70 minutes or until a knife inserted in the center comes out clean.
  9. Let stand for 10 minutes before serving.
