Ingredients

  • 1 whole brisket
  • Season‑All to taste
  • ½ cup butter
  • ½ cup flour
  • 1 can tomato paste
  • 1 onion, sliced or quartered
  • 1 green pepper, cut into strips
  • Carrots, cut into pieces

Instructions

  1. Trim the brisket and season it generously with Season‑All.
  2. Wrap the seasoned brisket in aluminum foil, sealing it completely.
  3. Place the wrapped brisket in a preheated oven at 375°F and roast for 60 minutes.
  4. Remove the brisket from the oven, let it rest for 30 minutes before slicing.
  5. While the brisket rests, strain the juices that have accumulated in the pan.
  6. In a saucepan, melt ½ cup butter over medium heat and whisk in ½ cup flour to create a roux.
  7. Gradually add the strained juices to the roux, stirring until smooth.
  8. Bring the mixture to a gentle boil, then stir in 1 can of tomato paste until fully incorporated.
  9. Add sliced onion, chopped carrots, and green pepper strips to the sauce and cook, stirring occasionally, until the vegetables are tender.
  10. Slice the rested brisket and arrange on a platter, then pour the tomato‑butter sauce over the meat and serve hot.
