Ingredients

  • 1 lb. turkey, cut into 1-inch cubes
  • 1 garlic clove, minced
  • 2 Tbsp. margarine
  • 3 c. frozen mixed vegetables
  • 3/4 lb. Velveeta cheese, cubed
  • 4 c. hot cooked rice

Instructions

  1. Cook turkey and minced garlic in margarine over low heat for 5 minutes, stirring occasionally.
  2. Stir in frozen mixed vegetables.
  3. Cook for 10 to 15 minutes or until vegetables are heated through, stirring occasionally.
  4. Add cubed Velveeta cheese; stir until cheese is melted and sauce is smooth.
  5. Serve the turkey and vegetable mixture over hot cooked rice.
