Ukrainian Meat Loaf features tender ground beef layered with cabbage and bacon, baked in a savory tomato sauce, offering hearty flavors perfect for family dinners or special occasions.

Ingredients

  • 1 small head cabbage
  • 1 1/2 tsp salt
  • 1 1/2 tsp pepper
  • 1/2 cup beef broth
  • 1 medium onion
  • 1 (8 oz) can tomato sauce
  • 1 tsp Worcestershire sauce
  • 1 1/2 lb ground chuck or extra lean ground beef
  • 1 cup bread crumbs
  • 1 Tbsp parsley flakes
  • 5 strips bacon
  • 1 Tbsp sugar

Instructions

  1. Cut cabbage into quarters and remove cores.
  2. Cover with boiling water and cook for 10 to 15 minutes.
  3. Drain the cabbage and set aside.
  4. In a bowl, mix ground beef, beef broth, parsley flakes, and minced onion.
  5. Line the bottom of a loaf pan with 2 strips of bacon.
  6. Layer cabbage over the bacon, then add a layer of the meat mixture.
  7. Alternate layers of cabbage and meat mixture, ending with the meat layer on top.
  8. Cover the top with 3 strips of bacon.
  9. Mix tomato sauce, sugar, and Worcestershire sauce; pour over the assembled meat loaf.
  10. Bake in a preheated 375°F (190°C) oven for 1 hour.
  11. Remove from oven and place on a cake rack.
  12. Allow to set for about 15 minutes or remove from the pan and turn out onto foil.
