Ultimate Brookies

Ingredients

  • FOR THE BROWNIES:
  • 4 Tablespoons Butter
  • 2 ounces, weight Unsweetened Chocolate
  • 1/3 cups Semi-Sweet Chocolate Chips
  • 3 whole Eggs
  • 1/2 cups Brown Sugar
  • 1/2 cups Sugar
  • 1 teaspoon Vanilla
  • 1/4 cups Whole Wheat Pastry Flour (or All-purpose)
  • 3 Tablespoons Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/4 teaspoons Salt
  • 1/4 cups Sour Cream
  • 1/2 cups Nuts (I Used Walnuts)

Instructions

  1. Preheat oven to 350°F. Grease a 9 x 13 pan with butter and dust with cocoa powder.
  2. For the brownies:
  3. Place butter and chocolate in a small sauce pan over low heat and heat until melted.
  4. In a mixer fitted with the whisk attachment, add eggs and sugars. Whisk until pale yellow and fluffy, about 5 minutes on medium. Add melted chocolate and vanilla to the egg mixture. Mix until almost incorporated. Add dry ingredients to the egg mixture and mix until full incorporated on stir, scraping down sides as needed.
  5. Add sour cream and nuts, stir in using a rubber spatula until fully incorporated. Place into a separate bowl, scraping down sides well and set aside.
  6. For the chocolate chip cookies:
  7. Use the scraped-down bowl and fit with a paddle attachment.
  8. Place butter and sugars in the bowl and beat until light and fluffy, about 3 minutes on medium. Add eggs 1 at a time, mixing well in between. Add vanilla, salt, baking soda and baking powder. Scrape down sides and mix for about 45 seconds. Add flours and mix well on medium low until fully incorporated, scraping down sides as needed. Add chocolate chips and nuts; mix or stir or by hand until equally incorporated.
  9. To assemble:
  10. Take the 9 x 13 greased and cocoa-powdered pan. Alternate dropping spoonfuls of brownie and cookie dough batter, until pan is full and all dough has been used. Swirl dough using a knife, but do not over mix! Level the top of the dough and then make a few small ripples over the top of the batter for texture.
  11. Bake for 35-45 minutes.Bars are done when a toothpick inserted in the middle comes out clean. Mine where done in 40 minutes.
