Ingredients

  • 1 1/2 cups cookie crumbs
  • 1/2 cup butter
  • 1 package caramel candies (14 oz)
  • 1/4 cup milk
  • 1/2 cup chopped pecans
  • 16 oz cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 3 eggs
  • 1 cup chocolate (optional for topping)

Instructions

  1. Preheat oven to 325°F if using a silver 9-inch springform pan, or to 300°F if using a dark nonstick springform pan.
  2. Mix cookie crumbs and melted butter; press firmly onto the bottom and 2 inches up the sides of the pan to form the crust.
  3. Place caramels and milk in a small microwavable bowl.
  4. Microwave on high for 3 minutes or until caramels are completely melted, stirring after each minute.
  5. Stir in chopped pecans into the caramel mixture.
  6. Pour half of the caramel-pecan mixture aside for later use.
  7. Beat cream cheese, sugar, and vanilla with an electric mixer on medium speed until well blended.
  8. Add eggs one at a time, mixing on low speed after each addition just until blended.
  9. Pour the cream cheese mixture over the caramel layer in the crust.
