Ingredients

  • 1 cup dates, chopped
  • 1 cup boiling water
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
  • 1 1/2 cups brown sugar

Instructions

  1. Combine the dates and boiling water in a bowl and let sit until softened.
  2. In a mixing bowl, combine 1/2 cup granulated sugar, 1/2 cup brown sugar, and the egg. Mix well.
  3. Add the flour, baking soda, baking powder, and salt to the wet ingredients. Stir until just combined.
  4. Fold in the chopped walnuts.
  5. Pour the batter into a greased baking dish.
  6. Spread the softened dates and their water evenly over the batter.
  7. Bake at 350°F for about 40 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and let cool slightly before serving.
  9. Serve warm with whipped cream or ice cream.
