Ingredients

  • 2 Tbsp. butter
  • 1/2 cup brown sugar
  • 1 cup sugar
  • 1 cup flour
  • 2 eggs
  • 1/3 cup fruit juice
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 16 oz. can pineapple rings
  • maraschino cherries

Instructions

  1. Melt butter and brown sugar in a heavy skillet and simmer for a few minutes.
  2. Mix sugar, flour, eggs, fruit juice, salt, and baking powder to form the batter.
  3. Place pineapple rings in the skillet over the caramelized mixture.
  4. Position maraschino cherries in the center of each pineapple ring.
  5. Pour the cake batter evenly over the pineapple and cherries.
  6. Place the skillet in a preheated 350°F (175°C) oven and bake for 30 to 40 minutes.
  7. Immediately invert the skillet onto a large cake plate to serve.
