Ingredients

  • 1 1/2 lb. ground beef
  • 1 cup oatmeal
  • 1 can V-8 vegetable juice (6 oz.)
  • 1/2 cup chopped onions
  • 1/4 cup chopped bell pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg

Instructions

  1. Combine the ground beef, V-8 vegetable juice, and the well beaten egg in a large mixing bowl.
  2. Add the oatmeal and mix until the mixture is really moist and well blended.
  3. Add the chopped onions, chopped bell pepper, salt, and black pepper to the mixture, and mix thoroughly.
  4. Shape the mixture into a loaf and place it in a baking dish.
  5. Bake at 350°F (175°C) for 1 hour until cooked through and browned on top.
