Veal Parmigiana(Microwave)

Ingredients

  • 1 Tbsp. olive oil
  • 1 (8 oz.) can tomato sauce
  • 3/4 to 1 lb. veal cutlets, flattened to 1/8-inch thickness
  • 3/4 c. shredded Mozzarella cheese
  • 1/4 c. chopped onion
  • 1/2 tsp. basil leaves
  • 1 egg, beaten
  • 1/3 c. finely crushed corn flake crumbs
  • 1 Tbsp. Parmesan cheese

Instructions

  1. In a 4-cup measure, combine olive oil and chopped onion.
  2. Microwave on High for 1 to 2 minutes or until onion is tender. Stir in tomato sauce and basil.
  3. Microwave on High for 3 to 5 minutes, or until sauce is hot and somewhat thickened.
  4. Dip veal cutlets in beaten egg, then dredge in crushed corn flake crumbs.
  5. Place the coated veal cutlets in a 12 x 8-inch dish. Cover with wax paper.
  6. Microwave on High for 3 1/2 to 5 minutes or until veal is fork-tender.
  7. Pour sauce over veal. Sprinkle with shredded Mozzarella cheese and top with Parmesan cheese.
  8. Microwave, uncovered, at 50% (Medium) power for 2 to 3 minutes or until cheese melts.
