Veal Parmigiana(Microwave)
A quick and comforting veal parmigiana made in the microwave, featuring tender veal, savory tomato sauce, and melted mozzarella cheese, perfect for a speedy weeknight dinner.

- In a 4-cup measure, combine olive oil and chopped onion.
- Microwave on High for 1 to 2 minutes or until onion is tender. Stir in tomato sauce and basil.
- Microwave on High for 3 to 5 minutes, or until sauce is hot and somewhat thickened.
- Dip veal cutlets in beaten egg, then dredge in crushed corn flake crumbs.
- Place the coated veal cutlets in a 12 x 8-inch dish. Cover with wax paper.
- Microwave on High for 3 1/2 to 5 minutes or until veal is fork-tender.
- Pour sauce over veal. Sprinkle with shredded Mozzarella cheese and top with Parmesan cheese.
- Microwave, uncovered, at 50% (Medium) power for 2 to 3 minutes or until cheese melts.
