Veal Piccata For Two*

- Pound the veal scallops thin and season with salt and pepper.
- Dredge the veal in flour, shaking off excess.
- In a skillet, melt 3 tablespoons of margarine and heat 2 tablespoons of olive oil over medium heat.
- Cook the veal scallops until golden brown on both sides, about 3-4 minutes per side. Remove and keep warm.
- In the same skillet, add lemon juice and simmer for 1-2 minutes.
- Return the veal to the skillet and spoon the sauce over it, cooking for another minute.
- Cook noodles according to package instructions, then drain.
- Stir chopped parsley into the sauce and serve the veal over the noodles.
