Tender veal scallops cooked in a flavorful lemon-butter sauce with fresh parsley, served over noodles for a delightful Italian-inspired meal perfect for a cozy dinner for two.

Ingredients

  • 4 veal scallops
  • flour
  • salt
  • pepper
  • 6 Tbsp. margarine
  • 2 Tbsp. olive oil
  • 3 Tbsp. lemon juice
  • 2 Tbsp. chopped parsley

Instructions

  1. Pound the veal scallops thin and season with salt and pepper.
  2. Dredge the veal in flour, shaking off excess.
  3. In a skillet, melt 3 tablespoons of margarine and heat 2 tablespoons of olive oil over medium heat.
  4. Cook the veal scallops until golden brown on both sides, about 3-4 minutes per side. Remove and keep warm.
  5. In the same skillet, add lemon juice and simmer for 1-2 minutes.
  6. Return the veal to the skillet and spoon the sauce over it, cooking for another minute.
  7. Cook noodles according to package instructions, then drain.
  8. Stir chopped parsley into the sauce and serve the veal over the noodles.
