Ingredients

  • 4 pieces veal shanks
  • 3 Tbsp. flour
  • 1/2 c. cooking oil
  • 1 minced garlic clove
  • 1 onion
  • 2 carrots
  • 1 stalk celery
  • 1 can whole tomatoes
  • 2 bay leaves
  • 1 c. dry white wine
  • salt
  • pepper
  • 1/4 c. parsley

Instructions

  1. Coat the veal shanks with flour.
  2. Heat cooking oil in a heavy skillet and add minced garlic.
  3. Add shanks and brown on both sides.
  4. Add chopped onion, chopped carrots, and chopped celery.
  5. Add chopped tomatoes, bay leaves, and white wine.
  6. Cook slowly for 1 1/2 to 2 hours.
  7. Add salt and pepper to taste.
  8. Sprinkle with chopped parsley and grated lemon peel.
  9. Serve with rice or spaghetti.
