  • 2 Tbsp. lemon juice
  • 2 c. thickly sliced carrots
  • 2 c. sliced onions
  • 1 c. thinly sliced celery
  • 1 c. dry lentils
  • 1 Tbsp. minced fresh garlic (about 3 cloves)
  • 1 tsp. dried mint or marjoram
  • pinch ground cinnamon
  • pinch ground nutmeg

Instructions

  1. Arrange the lamb cubes in a single layer in a shallow ovenproof dish.
  2. Bake, uncovered, in a preheated 400°F (200°C) oven for about 25 minutes, turning occasionally, until browned.
  3. Drain and discard any fat.
  4. Stir in the remaining ingredients: boiling water, tomato juice, lemon juice, carrots, onions, celery, lentils, garlic, dried mint or marjoram, ground cinnamon, nutmeg, salt, and pepper.
  5. Cover and bake for 1 1/2 hours, stirring occasionally.

Tips & Substitutions

For a richer flavor, consider marinating the lamb in a mixture of olive oil, lemon juice, and herbs for a few hours before cooking. If you don't have lentils, split peas can be a good substitute. Adjust the seasoning to your taste, and if you prefer a thicker stew, you can mash some of the lentils before serving.

Serving Suggestions

This hearty stew pairs beautifully with crusty bread or over a bed of rice for a complete meal. Consider serving it alongside a fresh Greek salad or roasted vegetables for a balanced dinner. For a Mediterranean flair, add a dollop of Greek yogurt on top before serving.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm the stew on the stovetop over medium heat, adding a splash of water or broth if it seems too thick. It also freezes well for up to 3 months; thaw in the refrigerator before reheating.

Frequently Asked Questions

Can I use other meats instead of lamb for this stew?

Yes, you can substitute the lamb with beef or chicken, but cooking times may vary. Beef may require a longer cooking time for tenderness, while chicken should be added later in the cooking process to prevent it from drying out.

What type of lentils work best for this recipe?

Brown or green lentils are ideal for this stew as they hold their shape well during cooking. Red lentils can be used, but they will break down and create a thicker consistency, which might alter the texture of the dish.

Is it possible to make this stew in advance?

Absolutely! This stew tastes even better the next day as the flavors meld. Simply prepare it in advance, let it cool completely, and store it in the refrigerator. Reheat when ready to serve for a quick and delicious meal.
