Instructions
- Pound veal steaks thin.
- Dip veal in egg and Ritz cracker crumbs. Brown quickly in hot skillet.
- Place veal in an ovenproof dish.
- Top veal with tomato slices and Swiss cheese.
- Combine beef broth, butter, lemon juice, mushrooms, salt, and pepper. Simmer and thicken with cornstarch.
- Pour the sauce over the veal and cover. Refrigerate if making ahead.
- Bake, covered, for 40 minutes at 350°F.
- Remove from oven, top with cheese, and bake until cheese melts.
