Veal special features tender veal slices topped with tomato and melted Swiss cheese, simmered in a flavorful lemon-broth mushroom sauce, perfect for elegant dinners or special occasions.

Ingredients

  • 4 slices veal
  • 1 cup beef broth
  • Juice of 1 lemon
  • 3 tablespoons butter
  • 1 small can mushrooms
  • 1 tablespoon cornstarch
  • 4 tomato slices
  • 4 slices Swiss cheese

Instructions

  1. Pound veal steaks thin.
  2. Dip veal in egg and Ritz cracker crumbs. Brown quickly in hot skillet.
  3. Place veal in an ovenproof dish.
  4. Top veal with tomato slices and Swiss cheese.
  5. Combine beef broth, butter, lemon juice, mushrooms, salt, and pepper. Simmer and thicken with cornstarch.
  6. Pour the sauce over the veal and cover. Refrigerate if making ahead.
  7. Bake, covered, for 40 minutes at 350°F.
  8. Remove from oven, top with cheese, and bake until cheese melts.
