Ingredients

  • 2 lb. chopped veal or combo of veal and turkey
  • spaghetti sauce of your choice
  • 1 small can mushroom pieces, drained
  • 1/4 c. dried vegetables
  • salt and pepper

Instructions

  1. Mix half of your spaghetti sauce with all your ingredients in a bowl.
  2. Using a microwave-safe quiche pan, form a circular meat loaf, leaving the center empty.
  3. Pour the remaining spaghetti sauce over the top of the meat loaf.
  4. Cook on High for 12 minutes in the microwave.
  5. Pour off drippings from the loaf.
  6. Cook on High for approximately 5 minutes more, or until cooked through.
  7. Serve with peas or another green vegetable in the center.
