Ingredients

  • 1 Tbsp. butter or margarine
  • 1 c. chopped onions
  • 1 c. chopped green pepper
  • 1 c. thinly sliced carrots
  • 2 cans (10 1/2 oz. each) condensed beef broth
  • 1 1/2 c. water

Instructions

  1. In a 3-quart casserole dish, place butter, chopped onions, chopped green pepper, and sliced carrots.
  2. Cover with lid.
  3. Microwave on High for 6 minutes or until vegetables are tender-crisp, stirring once during cooking.
  4. Stir in the condensed beef broth and water.
  5. Cover and microwave on High for another 6 minutes or until hot and bubbling, stirring once during cooking.
