Ingredients

  • 4 lb beef bone with meat
  • 1 medium onion
  • 3 qt cold water
  • 3 cans canned tomatoes
  • 1.5 cups finely chopped celery
  • 2.5 cups mixed vegetables (potatoes, turnips, cabbage, parsley)
  • 1 bay leaf
  • salt

Instructions

  1. Brown the soup meat and bone.
  2. Add sliced onion, salt, pepper, and water to the pot.
  3. Cover and simmer over low heat until the meat is tender, about 2.5 to 3 hours.
  4. Strain off the beef broth.
  5. Add chopped celery and mixed vegetables to the broth and simmer until vegetables are tender, about 1 hour.
  6. Remove cooked meat from bones, cut into small pieces, and add to the soup.
  7. Serve hot with crusty bread.
