Crispy vegetable chips made from thinly sliced potatoes, parsnips, turnips, and beets offer a healthy, flavorful snack perfect for sharing or munching on the go.

Ingredients

  • white potatoes (Idaho and Russet)
  • sweet potatoes
  • parsnips
  • white turnips
  • beets
  • salt

Instructions

  1. Scrub your choice of unpeeled vegetable well and cut into thin slices.
  2. Place the slices in a single layer on a rack in a shallow baking sheet and sprinkle lightly with salt.
  3. Bake in a preheated 300° oven until crisp and lightly browned.
  4. Check baking times: turnips and parsnips after 30 minutes; potatoes after 40 to 50 minutes; beets after 50 to 60 minutes.
  5. Make just enough chips to eat in one day, as they will soften slightly if stored.
  6. Recrisp chips in a preheated 300° oven for 2 to 3 minutes.
