Vegetable Cornucopia Salad
A vibrant, crunchy vegetable salad featuring an array of fresh greens and colorful peppers, perfect for light lunches or as a refreshing side dish for any occasion.
Ingredients
- 1 small head Boston lettuce ⓘ
- 1/2 small head radicchio
- 1/2 small head escarole
- 4 oz. button mushrooms ⓘ
- 1 medium yellow pepper, sliced ⓘ
- 1 medium cucumber, cut lengthwise in half, seeded and sliced ⓘ
- 2 heads Belgian endive
- 1/2 small head red leaf lettuce ⓘ
- 1 cup spinach leaves ⓘ
- 1 medium red pepper, sliced
- 8 cherry tomatoes, halved ⓘ
Instructions
- Tear the greens into bite-size pieces and combine them with the vegetables in a large salad bowl.
- Add the sliced peppers, cucumber, halved cherry tomatoes, and other ingredients.
- Toss the salad to combine and serve with your favorite dressing.
