A flavorful and healthy vegetable stuffed zucchini dish featuring mushrooms, carrots, and cheddar cheese, perfect for a comforting family dinner or a nutritious lunch.

Ingredients

  • 6 zucchini
  • 3 Tbsp. butter
  • 1/4 lb. mushrooms, diced
  • 2 Tbsp. minced onion
  • 1/2 c. shredded Cheddar cheese
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. water
  • 1 c. carrots, diced

Instructions

  1. Cut the zucchini in half lengthwise, scoop out the pulp, and dice it.
  2. Saute the zucchini pulp with mushrooms, diced carrots, minced onion, salt, and pepper in butter.
  3. Stir in shredded Cheddar cheese into the vegetable mixture.
  4. Fill each zucchini shell with the vegetable and cheese mixture.
  5. Place the filled zucchini in a narrow baking dish.
  6. Pour water around the zucchini shells.
  7. Cover the dish with foil and bake at 375°F for 20 minutes.
