Ingredients

  • lasagna noodles
  • carrots
  • broccoli
  • cauliflower
  • yellow squash
  • 2 cans cream of celery soup
  • Italian seasoning
  • grated Mozzarella cheese
  • Ricotta cheese
  • grated Parmesan cheese

Instructions

  1. Cook lasagna noodles according to package directions. Drain and set aside.
  2. Steam carrots, broccoli, cauliflower, and yellow squash until tender. Drain.
  3. In a bowl, mix the steamed vegetables with cream of celery soup and Italian seasoning.
  4. In a baking dish, layer cooked noodles, vegetable mixture, grated Mozzarella and Ricotta cheeses.
  5. Repeat layers as needed, ending with a layer of cheese on top.
  6. Sprinkle grated Parmesan cheese over the top layer.
  7. Bake in a 350°F oven until the cheese is bubbly and browned, about 30-35 minutes.
