Ingredients

  • 1 lb. mushrooms
  • 1 onion
  • 3 tender squash
  • 1 bell pepper
  • 3 to 4 Tbsp. margarine
  • salt to taste
  • garlic salt to taste
  • pepper to taste
  • 1 large tomato
  • 1 cup mayonnaise

Instructions

  1. Sauté bell pepper, onion, and squash until tender.
  2. Slice the tomato and place it on an unbaked pie crust.
  3. Add sautéed vegetables and mushrooms on top of the tomato.
  4. Mix mayonnaise and cheese, then spread over the vegetables.
  5. Bake at 350°F for approximately 1 hour.
  6. If the top browns too quickly, cover with foil and continue baking until done.
