Ingredients

  • 1 c. butter, softened
  • 2 c. sugar
  • 4 eggs, separated
  • 2 c. blackberry jam, seedless
  • 3 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1 tsp. ground allspice
  • 1 tsp. ground cloves
  • 1 tsp. ground nutmeg
  • 1 c. buttermilk
  • 1 1/2 c. chopped pecans
  • 1 1/2 c. raisins
  • 1 1/2 c. chopped dates
  • 1 1/2 c. chopped maraschino cherries
  • 1 tsp. vanilla extract
  • 1 c. mixed candied fruit

Instructions

  1. Cream the sugar and softened butter in a mixing bowl.
  2. Add the egg yolks and beat well.
  3. Stir in vanilla extract, buttermilk, and blackberry jam.
  4. Add all dry ingredients—flour, baking soda, baking powder, cinnamon, allspice, cloves, nutmeg—and beat with a mixer until well combined.
  5. Fold in the chopped pecans, raisins, dates, chopped maraschino cherries, and mixed candied fruit.
  6. Gently fold in the stiffly beaten egg whites.
  7. Divide the batter into three prepared cake layers.
  8. Bake at 350°F (175°C) for 25 to 30 minutes, then cover with foil.
  9. Bake for an additional 30 minutes or until a toothpick inserted into the center comes out clean.
