Crispy vegetable puffs with tender mashed potatoes, sweet corn, and fresh parsley, ideal as a snack or appetizer for gatherings and family meals.

Ingredients

  • 2 eggs
  • 1/4 tsp. pepper
  • 3 Tbsp. milk
  • 1 c. cold mashed potatoes
  • 1/2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. chopped parsley
  • 1 c. cooked or canned whole kernel corn

Instructions

  1. Beat the eggs and milk together.
  2. Sift flour, baking powder, salt, and pepper into the egg and milk mixture.
  3. Beat until well mixed.
  4. Add mashed potatoes and beat again.
  5. Stir the well-drained corn kernels and chopped parsley into the mixture with a spoon or rubber spatula.
  6. Drop spoonfuls of the mixture onto heated shortening until an inch square of bread browns in a minute.
  7. Fry only 4 or 5 puffs at a time, turning them in a few minutes until golden brown.
