Vegetable Quesadilla Combination

A flavorful vegetable quesadilla packed with cheese, sautéed vegetables, crispy bacon, and pimientos, perfect for a satisfying snack or meal for cheese and veggie lovers.

Ingredients

  • 1 medium onion or 1 bunch green onions
  • 1 bell pepper
  • 3 to 4 Tbsp. butter
  • 1 (6 oz.) can sliced mushrooms
  • 4 to 6 large fresh mushrooms, sliced
  • 1/4 tsp. salt
  • 6 oz. Cheddar cheese, shredded
  • 6 oz. Monterey Jack cheese, shredded
  • 8 (8-inch) flour tortillas
  • 8 slices bacon, cooked and crumbled

Instructions

  1. Saute onion and bell pepper in butter until barely tender.
  2. Add mushrooms and saute until mushrooms just start to darken as they absorb the butter.
  3. Mix in salt and set aside.
  4. Combine Cheddar and Monterey Jack cheese.
  5. Place 4 tortillas on a lightly buttered or oiled rectangular pancake griddle; let them warm through, then turn each one over.
  6. Top the 4 tortillas with half of the cheese, vegetable mixture, bacon, pimientos, and sliced ripe olives (optional), then add the remaining cheese.
  7. Place another tortilla on top of each filled tortilla.
  8. Cook until the bottom starts to brown and the cheese begins to melt.
