Ingredients

  • 1 cup sliced zucchini
  • 1 cup chopped onions
  • 2 garlic cloves
  • 1 sliced tomato
  • 1 cup cottage cheese
  • 2 eggs
  • 1 cup milk
  • dash of Tabasco sauce
  • Parmesan cheese

Instructions

  1. Saute onions, zucchini, and garlic in margarine or oil.
  2. Prebake a pie crust until slightly cooked.
  3. Mix together cottage cheese, eggs, milk, and a dash of Tabasco sauce.
  4. Add the sauteed vegetables to the egg mixture.
  5. Pour the mixture into the prebaked crust.
  6. Bake at about 350°F (175°C) until set, approximately 45 to 60 minutes.
  7. Sprinkle Parmesan cheese on top after baking and serve.
