Vegetable Souffle

A light and fluffy vegetable souffle packed with a medley of fresh flavors. Perfect as a vegetarian main or side dish, its tender vegetables combined with a creamy, cheesy base create a delightful texture and taste that appeals to all ages and occasions.

Ingredients

  • 2 c. mixed vegetables
  • 2 Tbsp. butter
  • 1 c. milk
  • 1 Tbsp. onion, grated
  • 1 pinch thyme, ground
  • 2 c. squash
  • 1 pinch pepper
  • 2 Tbsp. flour
  • 4 eggs, separated

Instructions

  1. Blanch mixed vegetables for 3 minutes and cook squash in boiling water for 10 minutes. Drain well.
  2. In a saucepan over heat, melt butter, then add flour and stir in milk. Cook until thickened.
  3. Remove from heat and set aside.
  4. Beat egg yolks until fairly stiff and add to sauce.
  5. Add seasonings and mix well.
  6. Add vegetables of choice.
  7. Beat egg whites until stiff and fold into mixture.
