Ingredients

  • 1/2 cup sliced yellow squash
  • 1/2 small eggplant, sliced 1/4-inch thick
  • 1/4 cup sliced onion
  • 1/4 cup diced red bell pepper
  • dash of salt and pepper
  • 3 tablespoons dried breadcrumbs
  • 3/4 ounce shredded Cheddar cheese

Instructions

  1. In a 6-inch round microwavable shallow casserole, layer sliced yellow squash and eggplant.
  2. Cover evenly with sliced onion and diced red bell pepper; sprinkle with salt and pepper.
  3. Cover with vented plastic wrap and microwave for 6 minutes, until vegetables are tender-crisp.
  4. In a small bowl, combine dried breadcrumbs, shredded Cheddar cheese, and basil.
  5. Sprinkle evenly over the vegetables.
  6. Cover with vented plastic wrap and microwave on High for 1 minute, until cheese melts.
