  • 1 1/2 cups corn bread mix or self-rising cornmeal
  • 1 (8 oz.) carton sour cream
  • 3/4 cup cooking oil
  • 1 cup creamed corn
  • 1 medium onion, chopped fine
  • 2 eggs
  • 1 tablespoon chopped jalapeno pepper (optional)

Instructions

  1. Combine all ingredients in a bowl.
  2. Pour the batter into a 10 x 13-inch glass baking dish.
  3. Bake at 350°F (175°C) for 45 minutes.
