Ingredients

  • 2 cups uncooked regular rice
  • 1 3/4 pounds ground venison
  • 1/4 pound ground pork fat
  • 3 cups water
  • 1 cup fresh chopped parsley or 4 tablespoons dried parsley
  • 1 cup diced green onion tops
  • 1/2 cup chopped onion
  • 1 tablespoon crushed red pepper
  • 2 tablespoons Creole seasoning

Instructions

  1. Cook the rice according to package directions, omitting salt, and set aside.
  2. In a large Dutch oven, combine the ground venison and ground pork fat.
  3. Brown the meat and drain all fat.
  4. Add the remaining ingredients, except casings, and mix well.
  5. Bring to a boil; reduce heat and simmer for 30 minutes or until liquid is absorbed, stirring occasionally.
  6. Add the cooked rice, stir well, and set aside.
