Ingredients

  • 2 lb. venison
  • 1 1/2 c. breadcrumbs
  • 2 eggs
  • 1 c. milk
  • 1 tsp. oregano
  • pepper
  • salt
  • olive oil

Instructions

  1. Pound the venison steaks until they are about 1/4-inch thick.
  2. Rub oregano into the meat.
  3. In a bowl, beat eggs and milk together.
  4. In a separate bowl, combine bread crumbs and pepper.
  5. Dip each cutlet into the milk and egg mixture, then coat with the bread crumbs on both sides.
  6. Heat olive oil in a heavy skillet over medium heat.
  7. Saute the cutlets until browned and the meat is cooked through, turning once.
  8. Serve hot with lemon wedges.
