Ingredients

  • 6 venison loin cutlets (1/4-inch thick)
  • 1/2 cup all-purpose flour
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 eggs
  • 1/4 cup milk
  • 1 1/2 cups bread crumbs
  • 2 teaspoons paprika
  • salad oil

Instructions

  1. Soak venison in strong vinegar for about 2 hours; remove, pat dry with paper towels, and tenderize by pounding with a meat mallet.
  2. Set aside.
  3. Combine flour, salt, and pepper in a shallow dish.
  4. In a separate bowl, beat eggs with milk.
  5. In another dish, combine bread crumbs and paprika.
  6. Dredge each venison cutlet in the flour mixture, shaking off excess.
  7. Dip cutlets into the egg mixture, then coat with bread crumb mixture.
  8. Saute in hot salad oil for 2 1/2 to 3 minutes per side until golden brown.
