Ingredients

  • 1 1/2 cups crushed butter crackers
  • 6 tablespoons margarine
  • 2 cups sliced Vidalia onions
  • 3/4 cup milk
  • 2 eggs
  • 3/4 teaspoon salt
  • 3/4 cup grated Cheddar cheese
  • paprika
  • parsley flakes

Instructions

  1. Preheat oven to 350°F.
  2. Mix crushed butter crackers with 4 tablespoons melted margarine and press into an 8-inch pie plate to form the crust.
  3. Melt 2 tablespoons margarine and sauté sliced Vidalia onions until tender.
  4. Beat eggs, milk, salt, and remaining melted margarine together until well combined.
  5. Pour sautéed onions over the cracker crust.
  6. Pour the egg mixture over the onions in the pie plate.
  7. Sprinkle grated Cheddar cheese on top and dot with paprika or parsley flakes.
  8. Bake in the preheated oven for 35 minutes until set and golden.
