Ingredients

  • 2 whole chicken breasts
  • 2 to 3 lb. cabbage
  • 1 c. peanuts, crushed
  • 2 medium onions
  • 1/2 c. vegetable oil
  • 1/2 c. vinegar
  • 2 tsp. sugar
  • 3 tsp. fish sauce
  • dash of lemon
  • 1 tsp. Vietnamese hot sauce
  • 2 Tbsp. cilantro, chopped

Instructions

  1. Combine onions, vegetable oil, sugar, fish sauce, lemon juice, and Vietnamese hot sauce to prepare the marinade.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. Cook the chicken breasts until fully cooked, then let cool and slice thinly.
  4. Shred the cabbage into thin strips and place in a large bowl.
  5. Add the sliced chicken, crushed peanuts, and chopped cilantro to the cabbage.
  6. Toss everything together with the remaining marinade to coat evenly.
  7. Serve immediately or chill before serving for a more refreshing taste.
