Ingredients

  • 1 c. flour
  • 1/2 c. cornmeal
  • 1 c. oatmeal
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 Tbsp. brown sugar
  • 2 c. milk
  • 2 eggs
  • 2 Tbsp. oil
  • 1 c. diced apples

Instructions

  1. Combine flour, cornmeal or oatmeal, salt, baking powder, and brown sugar in a bowl.
  2. In another bowl, mix the milk, eggs, and oil.
  3. Beat the mixture with a whip until well combined.
  4. Add the liquid mixture to the dry ingredients and stir until just mixed.
  5. Fold in the diced apples and chopped nuts.
  6. Pour the batter into a lightly greased, moderately hot waffle iron and cook until golden brown.
