Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tablespoon vinegar
  • 1 teaspoon baking soda
  • 2 ounces red food color
  • 2 tablespoons cocoa powder
  • 2 1/4 cups flour
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 teaspoon vanilla

Instructions

  1. Add vinegar to baking soda and set aside.
  2. Cream shortening, sugar, and eggs until light and fluffy.
  3. Make a paste of red food color and cocoa powder.
  4. Alternately add buttermilk and the cocoa paste to the creamed mixture.
  5. Incorporate flour and salt gradually into the mixture.
  6. Add the vinegar and baking soda mixture and vanilla, blending until just combined.
  7. Do not overmix; blend gently.
  8. Divide batter evenly into two greased 9-inch layer pans.
  9. Bake at 350°F (175°C) for 30 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool the cakes completely on wire racks.
  11. Slice each layer horizontally to make four layers total.
