Ingredients

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 egg yolks
  • 1 teaspoon grated orange rind
  • 1 tablespoon fresh orange juice
  • 1 cup chopped walnuts
  • 1 cup shredded coconut
  • 1/2 cup raisins
  • 2 egg whites
  • 1 (9-inch) unbaked pie crust

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, combine sugar, softened butter, egg yolks, grated orange rind, and orange juice. Beat until well mixed.
  3. Stir in chopped walnuts, shredded coconut, and raisins.
  4. Beat egg whites until stiff peaks form.
  5. Fold the beaten egg whites into the fruit and nut mixture.
  6. Pour the mixture into the unbaked pie crust.
  7. Bake for 45 to 50 minutes or until the top is lightly browned and the filling is set.
  8. Cool completely before slicing and serving.
