Walnut Granola Bars

- Mix together the walnuts, oats, sugar, flour, baking powder, cinnamon, chocolate chips, pumpkin seeds and coconut flakes. Puree the apricots in a food processor, then add the honey and butter and process to combine. Add the apricot and honey mixture to the dry ingredients and mix well.
- Preheat oven to 325°F. Line a 6 x 9 inch jelly roll pan with parchment paper. Spoon the mixture onto the pan and smooth surface with the back of a metal tablespoon.
- Bake for about 25 minutes, until lightly browned and firm. Allow to cool for 10 minutes, then cut into 12 bars. Store in an airtight container.
