Ingredients

  • 4 eggs
  • 3 cups sugar
  • 1 cup oil
  • 1/3 cup water
  • 2 cups pumpkin
  • 3 1/2 cups sifted flour
  • 2 teaspoons soda
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons salt
  • 1 1/2 cups chopped dates
  • 1 1/2 cups chopped walnuts

Instructions

  1. Beat eggs with sugar in a bowl.
  2. Add oil, water, and pumpkin; mix well.
  3. Mix in flour, soda, cinnamon, and salt.
  4. Stir in chopped dates and chopped walnuts.
  5. Spoon the batter into 3 greased and floured loaf pans.
  6. Bake at 350°F (175°C) for 1 hour.
  7. Remove from oven and transfer to a wire rack to cool.
