War Time Fruit Cake

A hearty wartime fruit cake with rich flavors of spices, raisins, and candied fruit, perfect for sharing during festive or nostalgic occasions.

Ingredients

  • 2 Tbsp lard
  • 2 c water
  • 2 c sugar
  • 2 Tbsp cocoa
  • 1 tsp cloves
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1/2 c walnuts
  • 1/2 lb raisins
  • 1/2 lb candied fruit
  • 1 tsp baking soda
  • 1 Tbsp warm water
  • 3 c flour

Instructions

  1. Boil the lard, water, sugar, cocoa, cloves, cinnamon, and salt for 5 minutes.
  2. Let the mixture cool.
  3. Add chopped walnuts, raisins, candied fruit, baking soda in warm water, flour, and baking powder to the cooled mixture.
  4. Pour the batter into a greased loaf pan lined with wax paper.
  5. Bake at 325°F (160°C) for 1 hour.
