Ingredients

  • 6 egg yolks
  • 6 Tbsp butter
  • 1/2 tsp cinnamon
  • 1 Tbsp cocoa
  • 2 1/3 c bread crumbs
  • 1/2 c grated almonds
  • 1/4 c cherry juice
  • 6 egg whites
  • 3 Tbsp sugar
  • 1 (16 oz) can sweet cherries

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Beat egg yolks, butter, and sugar until pale yellow.
  3. Add cocoa and cinnamon to the mixture.
  4. Moisten bread crumbs with cherry juice and add to the mixture along with grated almonds.
  5. Beat egg whites with sugar until soft peaks form.
  6. Gently fold the egg whites into the batter, alternating with drained cherries.
  7. Pour the batter into a buttered 10-inch spring-form pan.
  8. Bake for 10 minutes, then reduce temperature to 375°F (190°C) and bake for an additional 50 minutes.
