Ingredients

  • 2 lb. ground beef
  • 1 large onion
  • 1 cup bell pepper
  • 16 cups tomatoes (4 large cans)
  • 1 cup rice
  • 1 tsp. Italian seasoning

Instructions

  1. Brown the ground beef, chopped onion, and bell pepper in a skillet; drain excess fat.
  2. In a pot, cook tomatoes, rice, and Italian seasoning; bring to a boil.
  3. Reduce heat, cover, and let it simmer until the rice is tender.
  4. Mix the cooked beef mixture with the tomato and rice sauce.
  5. Pour the mixture into a baking dish and top with shredded Cheddar cheese.
  6. Bake in a 350°F oven until the cheese is melted and bubbly.
