Ingredients

  • 1 lb dried lima beans
  • 1/2 lb ground beef
  • 1 medium onion
  • 3 Tbsp oil
  • 2 cans tomato sauce (8 oz.)
  • 2 1/2 tsp salt
  • dash poultry seasoning

Instructions

  1. Wash and soak dried lima beans overnight in 2 quarts of water.
  2. Simmer the beans in the same water until tender, about 1 to 1 1/4 hours. Season with salt after 30 minutes of cooking.
  3. Drain the beans and place them in a casserole dish, reserving 1/2 cup of the boiling liquid.
  4. Cook ground beef and chopped onion in oil, stirring until slightly browned.
  5. Add tomato sauce, the rest of the ingredients, and the reserved bean cooking liquid.
  6. Mix well and pour the mixture over the beans while hot.
  7. Bake in a 350°F oven for 1 hour or until bubbly and hot.
