Ingredients

  • 1 cup shortening
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 cups puffed rice
  • 1 cup oats
  • 1 cup coconut (optional)
  • 1 cup nuts

Instructions

  1. Cream the shortening until smooth.
  2. Add the sugar and brown sugar, and mix well.
  3. Add the eggs to the mixture and beat until combined.
  4. Sift together the flour, baking soda, salt, and baking powder.
  5. Gradually add the sifted dry ingredients to the sugar mixture, mixing well.
  6. Stir in the puffed rice, oats, coconut (if using), and nuts until evenly distributed.
  7. Drop spoonfuls of dough onto a greased or parchment-lined baking sheet.
  8. Bake at 350°F (175°C) for 10 to 12 minutes until golden brown.
